I am very sorry that I have not been here much recently. My life has become rather hectic. (I hate Casper.)
I would like all of you to try this delicious recipe. It is courtesy of the Prime Minister of Whangdoodleland, but I don't think she'll mind if I post it here. It's really easy and doesn't take long.
Ingredients:
2 c. AP flour
2 tsp. Pumpkin pie spice
1/2 tsp. salt
1 c. sugar
3/4 c. shortening (margarine can be a substitute)
1/4 c. molasses
1 egg
Sugar for rolling
Preheat oven to 350 degrees F. Lightly grease a cookie sheet (pam works well).
In a medium bowl, combine flour, spices, and salt well. Set aside. In a mixer bowl, cream the shortening OR softened margarine with the sugar until thoroughly mixed. Add the egg and molasses and let it mix well. SLOWLY add flour mixture. Form into 1 1/2 inch balls and roll in sugar. Place on the greased cookie sheet about two inches apart and flatten slightly. Bake for about 10 minutes. You'll know they're done when they are cracking on top more than just a tiny bit. Transfer to cooling rack for a few minutes. Best warm with, dipped in a glass of milk!
Makes about 25-30 cookies.
It really is a delicious recipe. I have been trying to relieve my stress by making food.
